Dr. Elizabeth George
Dr. Liz has been a pioneer in public health initiatives, spearheading the elimination of smoking from Chambersburg Hospital and establishing a Maternity Clinic to help parents adopt healthy eating habits before their children are born, an effort recognized with a March of Dimes award. Her dedication to wellness education has extended to mission trips to Bolivia, Ecuador, and the Amazon, where she promoted traditional, nutritious meals over processed foods.
A founder of the Mercersburg Area Council for Wellness, Dr. Liz has worked tirelessly to make Mercersburg a model of healthy living, with initiatives promoting healthy eating and active lifestyles. In 2010, she started Healthy Eating Adventure, a community-based program advocating for whole foods plant-based eating, which has since spread beyond Franklin County, PA. Dr. Liz’s work has been presented at physician continuing education conferences and the international Healthy Lifestyle Expo. She has also collaborated with hospital dining services to offer plant-based entrées at every meal, encouraging physicians to promote healthy lifestyles within their communities. Her efforts have been recognized with the Inaugural PaAFP Community Service Award for community wellness advocacy.
Chef Nick Iula
For more than three decades, Nick worked for Compass Group North America as the director of dining services at various prestigious universities, including Harvard Law School, Northeastern University, University of Florida, University of Houston, and Shippensburg University. It was at Shippensburg University where Nick joined Healthy Eating Adventure and transformed his health through whole food plant-based eating, reversing conditions such as fatty liver disease, hypertension, pre-diabetes, gout, and obesity.
Nick’s dedication to plant-based nutrition led to the incorporation of whole food plant-based choices in the university dining options, earning a PETA award as a top ten university for plant-based menus. Now, Nick helps coordinate Healthy Eating Adventures and enjoys teaching “creative cooking” to participants and other organizations. His professional passion for healthy food encompasses environmental concerns and social advocacy. Nick lives in rural south-central Pennsylvania with his wife, Roberta, a talented artist.
